A Perfect Summer Recipe!

It's Civic Holiday today in Canada (though it has other names in other provinces) and most people celebrate the day off by barbequing and enjoying a few drinks. It's the last 'real' summer holiday, as September brings Labour day, back to school and the countdown to cooler weather. 

I put together a no-fuss summer pizza, perfect for enjoying a lazy summer holiday! Keep scrolling for the recipe!



The drink spread this year! I don't drink a lot of alcohol but when I do - I usually stick to mixed drinks (like mimosas or cosmos)!







The whole spread! This pizza is so delicious and not at all heavy! The key is using fresh ingredients and letting the tomatoes bake until they blister




So good! I could eat this everyday!

Blistered Tomato Pizza: 
INGREDIENTS

2 cups (and a handful extra) grated Parmesan*
Salt and pepper
1 pound pizza dough, thawed if frozen
4 tablespoons olive oil,
2 (1 each red and yellow) pints cherry tomatoes cut into halves


DIRECTIONS

Preheat oven to 500 degrees.
On a baking sheet, drizzle pizza dough with 2 tablespoons oil and stretch or roll into a rectangle. 
Spread desired cheese on the dough and bake for about 10 minutes.
In a bowl, toss cherry tomatoes with remaining 2 tablespoons oil and season with salt and pepper. 
Remove pizza dough with cheese from the oven and spoon the tomato mixture onto the pizza. 
Add the handful of cheese on top of the tomato mixture.
Bake pizza until crust is deep golden brown and tomato skins have blistered, about 8 minutes more. 
Let cool and enjoy!

*You can use dairy free cheese to make this recipe vegan
