1 onion, sliced
1 stalk of celery chopped
2 cans mixed beans
1 red bell pepper
2 14 oz cans diced tomatoes
1 can of corn or package of frozen corn
1 cup vegetable broth
1 cup water
1 tbsp chili powder
1 tbsps fresh chopped garlic
salt and pepper to your taste
What to do:
1. Place the onions, beans, tomatoes, corn, garlic, pepper and celery into the crock pot. Add the water and broth and stir.
2. Add salt, pepper, chili powder and cinnamon, then stir to mix.
3. Cook on high for 6 hours or low for 8 hours. When you serve, garnish with tortilla chips (you can add cheese and sour cream if you don't mind the dish being vegetarian instead of vegan)

ReplyDeleteThis looks delicious! I'm not a vegetarian or vegan, but I am not a huge fan of meat, so I'm always looking for new recipes. I will have to try this one next!
