I usually have very smooth mornings, but from time to time they can get rough.
Whenever I'm having a hard morning, I tend to skip breakfast (I know, I know) so that I can make sure I get out the door on time. In my quest to make my mornings more efficient - I spent some time researching quick and easy breakfast recipes - so that I'm not getting groggy by 10 am.
I came across this carrot cake waffle recipe on Eating Well and decided to give it a try this morning.
It tasted exactly like a carrot cake, and provided me with tons of energy!
Give it a try!
- 2 frozen waffles
- 2 tablespoons cream cheese
- 1/2 cup shredded carrot
- 2 tablespoons raisins
- 1 tablespoon chopped walnuts (I left these out due to an allergy)
- 2 teaspoons pure maple syrup
Delicious!
