The 5 Minute Breakfast

I usually have very smooth mornings, but from time to time they can get rough. 
Whenever I'm having a hard morning, I tend to skip breakfast (I know, I know) so that I can make sure I get out the door on time. In my quest to make my mornings more efficient - I spent some time researching quick and easy breakfast recipes - so that I'm not getting groggy by 10 am. 

I came across this carrot cake waffle recipe on Eating Well and decided to give it a try this morning.  
It tasted exactly like a carrot cake, and provided me with tons of energy!

Carrot Cake Waffle Breakfast Sandwich Recipe

  • 2 frozen waffles
  • 2 tablespoons cream cheese 
  • 1/2 cup shredded carrot
  • 2 tablespoons raisins
  • 1 tablespoon chopped walnuts (I left these out due to an allergy) 
  • 2 teaspoons pure maple syrup

Delicious!

Twenty One

It's my birthday and as the title suggests I'm 21. I used to be really into birthdays and celebrating lavishly, but this year I'll be content with some Red Velvet cake and free time (I must be growing up). 

Here's baby me to entertain you!

Growing up I was always sad that my birthday was in the summer because it meant not many people were in town to attend my (always themed) birthday parties or decorate my locker in high school. I (vaguely) remember being jealous of those girls who would arrive at school to have their lockers wonderfully decorated by their group of friends. I digress. 

I don't feel much different but I'm sure as this year unravels that sentiment will change. I can't wait to see what 21 has in store!

The Perfect Midweek Pick-Me-Up

I can't believe it's only Wednesday. This week seems to be dragging on and on. Between school (yes, you read that right - school...in the summer), interning and extracurricular activities, I'm drowning. Fortunately, I had a few moments to pop into my local Starbucks to test out their new Valencia Orange Refresher.


I loved it!! I'm a huge fan of the Very Berry Hibiscus refresher, but this one tops that! It's a perfect balance of sweet and thirst quenching. I definitely recommend if you're in the mid week slump with me!

Decorate Me: Stylish Spaces

I've been living in my new apartment since May and I still feel like it's only 55% complete! 
I mostly struggle with being indecisive when choosing decor items and the fact that decorating an entire apartment is pretty expensive! I also think that the millions of adorable apartment photos swirling around on Pinterest don't help my case one bit.

Currently Reading



I finished reading the Classy books recently and needed a new non-academic book right away!

I heard about this book from a few blogs that I read and decided to give it a try. I probably would not have picked this book up on my own - so thank goodness for suggestions. I'm about halfway through Girls in White Dresses and I really love it. I find it super hard to put it down. 

Girls in White Dresses follows a group of very different friends as they grow up and navigate through different relationships. What I love about this novel is the balance between the serious moments and the really hilarious moments. Definitely worth reading!

I spent some time on the Kate Spade Saturday website and fell in live with this dress. The back is what I would consider to be daring, but I can't help loving the simple silhouette and the fact that this dress can easily be dressed up or down.

Cranberry-Grapefruit Sparkler Recipe

It's been super hot lately and truthfully a girl can only drink so much water to stay hydrated. I spent a bit of time (read: hours) researching the perfect summer drink that wasn't loaded with sugar and I stumbled across this Sparkler recipe by Martha Stewart. 

I decided to give the recipe a try and I really loved it!
(sadly, my glass looked nowhere as pretty as the photo)



Ingredients

  • 1 cup cranberry juice
  • 1 cup grapefruit juice
  • 1 cup sparkling mineral water
  • Juice of 1/2 lime

Directions

Combine ingredients in 2 tall glasses, adding 1/2 cup of each juice, 1/2 cup sparkling mineral water, and a squeeze of lime to each glass. Stir, add ice, and serve with a slice of lime


Super easy and super delicious!

Internship Do's and Don'ts

I haven't really spoken much about this, but I'm currently completing an internship at a local hospital as part of my degree requirements. So far, it's been a really interesting experience and I'm getting to see things that I would never have the chance to see in a classroom. 

There are three other people from my class completing the internship with me which is also really, really interesting. I really enjoy taking a step back and observing people in different situations (read: people watching), which sometimes really gives me an insight on what to do and what not to do. 

The Devil Wears Prada

1. DO: Arrive on time
While I'm lucky in the sense that my internship doesn't have set hours, after a certain point in the day it just doesn't make sense to show up. Everyone typically heads home by 4 PM, so by 3 everyone is super focused on getting their work for the day done. Showing up super late and asking a bunch of questions at that point in the day can distract and annoy the doctors. 

2. DON'T: Dress like a slob or like you're about the walk the runway
Every office has it's own dress code. Make yourself very aware of this dress code and do your very best to adhere to it. On any given day at the hospital people will be dressed in scrubs or business attire. I've seen people show up in yesterday's sweatpants or 5-inch heels. Both extreme and both inappropriate. Take the time to dress yourself neatly and appropriately. Please. 

3. DO: Come prepared
I like to bring a notebook to my internship to jot down information that I receive from the doctors and assistants about themselves and their work. It's important to bring the appropriate materials to your internship that will allow you to complete your work efficiently and properly. I also like to ask questions about research going on in the particular field that I am interning in. Going to your internship with questions will show that you are interested in what your company does and that you are actually learning things. 

Multitasking

4. DON'T: Think you are the professional
I see this all of the time and it annoys me - so I can only imagine how the doctors feel. Be respectful of the fact that it takes many years of hard work to become a professional. It's really good to be interested and involved in the operations of the company you are interning for, but there is a line. Don't under any circumstance criticize the professional's work (even if you think it's terrible), don't go into their offices unless you are asked to and don't try to do any tasks that you weren't given permission to do. 

5. DO: Set goals for learning
At the end of the day, you are there to learn. Before you begin interning, set some goals for yourself. This will give you direction and something to work for during the internship. It's really obvious who shows up just for the sake of showing up and who is there to learn. Your internship is for your benefit. If you don't take advantage of the opportunity to learn, it is disrespectful to your company who could have given your spot to someone else. 


I think internships are great opportunities for learning and growth and are really exciting. I also think it's super important to remember that an internship is an extended interview which means you should always put your best foot forward no matter what!

Slump

I am seriously overwhelmed right now. I really like to pretend that I've got it all together, but sometimes I really don't. 

As I type this there are exactly 50 tabs open in my browser, 70 outstanding items on my to-do list, and an out of control personal situation.



I think the worst thing about this slump is the fact that I'm impatient and want all of the answers right now. 
I know that having all the answers isn't possible - which is super frustrating - so until then I will start tackling that to-do and work on being more patient.
